Gather your ingredients, fire up the waffle iron, and melt the butter.
In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
Separate the eggs, adding the yolks to the dry ingredients, and placing the whites in another mixing bowl.
Beat the egg whites until firm (you should see some peaks, but with a bit of droopiness to them) and set aside for now.
Add the milk, vanilla extract, and melted butter to dry ingredients and whisk together until combined (a few lumps are fine).
Fold whipped egg whites into mixture. Be careful to maintain the airiness of the egg whites—it's more important to be light than thoroughly combined.
Ladle mixture into the hot waffle iron and cook. Timing is tricky, because it can vary a ton by waffle iron—if you are using one of the Breville waffle iron I suggest, try the setting of Belgian with two clicks towards dark from the default.

You can't invest in waffles and skimp on syrup—I generally have a bottle of Runamok Sugarmakers's Cut on hand. Also, I don't condone mucking up perfectly
good batter with "extras", but I'm not above experimenting with infused syrups or toppings. For instance,
Runamok's specialty syrups are good fun—Elderberry being my favorite.
If you do any amount of baking, you really should get a kitchen scale and
stop using volume for dry ingredients—it's just not accurate enough.
You'll want some good mixing bowls—glass for melting butter in the microwave
and I like stainless steel for mixing, they are light and don't run the risk
of shattering.
