Ingredients

  • 102g
    all-purpose flour
  • 10g
    baking powder
  • 2g
    salt
  • 8g
    sugar
  • 1.5
    eggs
    separate whites and yolks
  • 58g
    butter
    melted
  • 188g
    milk
  • 5g
    vanilla extract

Directions

  1. Gather your ingredients, fire up the waffle iron, and melt the butter.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Separate the eggs, adding the yolks to the dry ingredients, and placing the whites in another mixing bowl.
  4. Beat the egg whites until firm (you should see some peaks, but with a bit of droopiness to them) and set aside for now.
  5. Add the milk, vanilla extract, and melted butter to dry ingredients and whisk together until combined (a few lumps are fine).
  6. Fold whipped egg whites into mixture. Be careful to maintain the airiness of the egg whites—it's more important to be light than thoroughly combined.
  7. Ladle mixture into the hot waffle iron and cook. Timing is tricky, because it can vary a ton by waffle iron—if you are using one of the Breville waffle iron I suggest, try the setting of Belgian with two clicks towards dark from the default.
  8. Enjoy those sweet, sweet waffles! While you settle into complete bliss, go ahead and share this recipe with a loved one to help eradicate the world of sub-par waffles!
